1. | Tear 14 sheets of parchment paper, each about 11 inches long. On each sheet, trace the bottom of a 9-inch round cake pan. Evenly stack the sheets with the pattern on top, and with kitchen shears, cut out circles that are approximately 1-2 inches larger in diameter than the pattern you traced. |
2. | In a large bowl, measure sugar, butter, eggs, cinnamon and 2 cups flour. With mixer at low speed, beat ingredients until well mixed, constantly scraping the bowl with a spatula. Increase the speed to medium; beat 3 minutes or until light and fluffy, occasionally scraping the bowl. With a spoon, stir in remaining ⅔ cups flour to make a soft dough. |
3. | Preheat oven to 375°. With a damp cloth, moisten 1 large or 2 small cookie sheets. Place 2 parchment paper circles onto large cookie sheet or 1 on each small cookie sheet. (The water will help the parchment paper stay put.) With a metal spatula or knife, spread ⅓ cups dough in a very thin layer within each 9-inch traced circle. (Do not spread the dough all the way to the cut edges! The edges are for handling.) Bake layers 8-12 minutes or until lightly browned around the edges (watch carefully!). NOTE: You need to moisten the cookie sheets each time you place a new circle on them to keep the paper from sliding away from you. Try to keep the dough on the paper circle, and don't get any onto the sheet, or the cookie may stick to the sheet and break when you are trying to remove it. |
4. | Remove the cookie sheet and place on a wire rack; cool 5 minutes. With a pancake turner, carefully remove cookie still on parchment paper to wire rack to cool completely. Allow the cookie sheet to cool before spreading remaining parchment paper circles with more dough. The more sheets you have, the faster you can bake the cookies. Repeat until all dough is baked. Carefully stack cooled cookies on a flat plate. Cover with plastic wrap, and store in a cool, dry place. |
5. | Before serving: Coarsely grate chocolate squares; set aside. In a large bowl, with the mixer at medium speed, beat the heavy cream and cocoa until soft peaks form. |
6. | Carefully peel the parchment paper from one cookie; place on a flat cake plate and spread with about ½ cup whipped cream mixture. Repeat layering until all cookies are used, ending up with whipped mixture on top. |
7. | Pile grated chocolate on top of cake. Refrigerate until serving time, or at least 3 hours before serving so cookies soften for easier cutting. |
